Cajun Potato Salad Recipes

Love cajun potato salad from Louisiana!

Cajun potato salad is so much better than plain old potato salad! If you haven't tried it yet, just imagine a potato salad that actually has some kick to it. Get the point? Cajun potato salad goes well with just about every meal. Even though this may not be a traditional Cajun food, it has become one around our house.

I like just about anything that is spicy. Maybe that's why I love Cajun potato salad recipes. They really are good. Once you get bored with any regular recipe, you can always just add a bit of Cajun seasoning to it to spice things up. We hope you enjoy these Cajun potato salad recipes. "Cajun Potato Salad"

Ingredients:

  • 2 lbs. of red potatoes, cut into quarters, and peeled if you prefer
  • 2 teaspoons of salt
  • 7 boiled eggs
  • 1/4 cup of vegetable oil
  • 1 teaspoon of vinegar
  • 3/4 cup of mayo
  • 1 teaspoon (or more) of Tabasco
  • 1 chopped up sweet pickle
  • 1 stalk of celery chopped up
  • 1 small green bell pepper chopped up

Instructions:

  • Fill a pot half way with water and bring it to a boil.
  • Add your potatoes and salt and cook them for about 15 minutes.
  • Drain the water out of the pot.
  • Add everything to a bowl and mix it well.
  • Refrigerate for at least an hour before serving.
  • Top off the pan of potato salad with some red pepper for color.
