Love Cajun cracklin from Louisiana!

Cracklin is one of those Cajun foods that you will either love or hate. There are no in-betweens. For those that love cracklin, it is a true delicacy. Considering the costs of real cracklin at the store, it is somewhat of a delicacy.

Cracklin is just a fried piece of pork fat, with a bit of skin attached to it. While some may eat it with a meal, most Cajuns think of cracklin as a snack. The origin of cracklin dates back to the early 1800's, but it still had some hair attached to it back then. Learning to cook cracklin is considered to be somewhat of an art, and many Cajun families will die with their personal recipes before giving them to outsiders.

CRACKLIN RECIPES

Trying to work with cracklin recipes is like trying to work with a new painting technique. It takes a lot of time and patience. When dealing with cracklin recipes, nothing moves quickly. "Cracklin"

Ingredients:

  • 1 lb. of frozen pork skin
  • some salt
  • enough oil to fill a frying pot about half way
  • some paper towels

Instructions:

  • Heat the oil in a pot over medium-high heat.
  • Cut the pork skins into 1/2" pieces
  • Fry the pork skins in the pot until they are a golden brown (about 5-7 minutes)
  • Remove the pork skins and place them on the paper towels to drain.
  • Season with salt and other Cajun seasonings..
