Mardi Gras King Cakes

Sweeter than beignets, and way more fattening than boiled crawfish, Mardi Gras King Cakes are simply incredible! Sadly, you can only buy these Mardi Gras treats in Louisiana during the carnival season. Then again, maybe that's a good thing. If I thought that I could run to the store and buy some Mardi Gras King Cakes every day, I would likely weigh 400 pounds! I'm not kidding folks. If you haven't had a King Cake, a really good one, you just don't know what you are missing out on.
King Cakes come in so many flavors that it can be really tough to pick one out. Don't worry though. All of them taste great, but in my opinion the best King Cake is the cream cheese one. But that's just me. Here is a list of the most popular King Cake flavors that you can find: cream cheese, strawberry, raspberry, blackberry, pina colada, apple, cinnamon, lemon, peach, and chocolate. There are also a lot of new and creative King Cake flavors at progressive bakeries now such as Reese's, Ambrosia, Almond Joy, and many more. You can even get the original of the King Cake flavors, no filling, but I highly recommend against it. Seriously folks, why would you want to skimp out and save a few calories now? Since you have already taken the King Cake plunge, you really need to go all the way with it! Enjoy your Mardi Gras King Cakes while you can.
Since we can only enjoy a King Cake that is bought from a store or bakery during the Mardi Gras season, it's a good idea to learn this King Cake recipe so that you don't starve the rest of the year! Sure, this may end up costing you a couple of extra pounds, but that's a small price to pay for this King Cake recipe. Enjoy!
Ingredients For The King Cake:
- about 1/4 cup of real butter
- 1/3 cup of granulated sugar
- 16 oz. of sour cream (not the "light" kind)
- 2 teaspoons of salt
- 1 package of dry yeast
- 1 tablespoon of sugar (in addition to the 1/3 cup above)
- 1/2 cup of water that is about 110 degrees F
- 2 eggs
- 6 cups of white flour
Ingredients For The Icing And Filling:
- 2 teaspoons of cinnamon
- 1/2 cup of granulated sugar
- 1/3 cup of real butter
- some colored sugar and frostings for decorations
Instructions:
- In a saucepan, combine the butter, 1/3 cup of sugar, sour cream, and salt. Heat and stir until the butter has completely melted.
- Allow the mixture to cool until it is about 110 degrees F.
- In a separate bowl, combine the warm water, yeast, and 1 tablespoon of sugar. Let this sit for five minutes.
- Add the mixture from the saucepan to the bowl with the yeast and water. Add the eggs and 2 cups of the flour. Mix until it is soft, and then slowly add more flour.
- Remove the dough from the bowl and place it on a floured surface. Knead it for about 10 minutes.
- Place the dough in a greased bowl and cover it. Allow it to rise for one hour, or until it has doubled.
- Combine the cinnamon and 1/2 cup of granulated sugar. Set this to the side.
- Take your dough out and divide it in half.
- Take one of the halves and place it on a floured surface. Roll this dough to a size of about 26" x 12".
- Spread half of the cinnamon and sugar on this rolled out rectangle. Spread half of the 1/3 cup of butter on it.
- Roll this rectangle shaped dough like a jelly roll. Roll it so that you will end up with a 26" long tube.
- Place the rolled dough on a baking sheet that has been greased.
- Bring the ends of the roll together to form an oval. Pinch the ends.
- Cover the roll and let it rise for about 20 minutes, or until it doubles in size.
- Place the baking sheet in an oven and set it at 375 degrees F for about 20 minutes.
- Remove the King Cake and decorate it with the colored sugar and frostings.
