Red Beans And Rice Recipes

Love red beans and rice in Louisiana!

Red beans and rice is a Cajun food that has become famous around the world, and rightly so! The dish is so basic and simple, yet it is just so dang good! Red beans and rice is so common and well known in Louisiana that our kids even et them regularly at school. For an added treat, try fixing some corn fritters to go with your red beans and rice. Traditionally, red beans and rice was a dish that was always made on Mondays, using ingredients that were left over from the week prior. Since many Cajun women washed the clothes on Monday, letting a pot of beans cook all day was easier on them. While we may not wash clothes all day on Mondays anymore, serving red beans and rice (made the traditional way) is still common and appreciated by all.

One of our favorite New Orleans meals is made with red beans and rice recipes. Who could possibly pass this simple meal up, that you can cook enough to feed a family of any size in one pot? "Red Beans And Rice"

Ingredients:

  • 1 cup of chopped white onions
  • 2 tablespoons of vegetable oil
  • 1/2 cup of chopped bell peppers
  • 2 teaspoons of salt
  • 1/2 cup of chopped celery
  • 1 teaspoon of red pepper
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of dried thyme
  • 1 lb. of ham, cut into small cubes
  • 1/2 lb. of smoked sausage, cut into small pieces
  • 1 lb. of dried red beans that have been soaked in water overnight
  • 3 tablespoons of garlic
  • 10 cups of water
  • rice that has been prepared seperately

Instructions:

  • In a large pot, heat the oil over a medium-high heat.
  • Cook the onions, bell peppers, celery, salt, cayenne, black pepper and thyme in the oil for about 5 minutes.
  • Add the red beans and garlic to the mixture. Add enough water to cover everything.
  • Bring the pot to a boil, and then reduce the heat to medium.
  • Cook it uncovered for about 2 hours.
  • Add more water, if needed, and mash about half of the beans with a wooden spoon.
  • Cook for another 2 hours.
  • Serve over rice.
  • Add a little extra Cajun seasonings to kick it up.
  • Enjoy your red beans and rice!
