Sauce Piquant Recipes

Sauce piquant (or piquante) is a true Cajun delicacy! It's basically a tomatoe based Cajun food in which you add any type of meats that you want to. Some common types of sauce piquant use rabbit, duck, seafood, venison, alligator, or nutria. Be creative and see what kind of sauce piquant you can come up with.

"Alligator Sauce Piquant"
Ingredients:
- 4 lbs. of alligator meat
- 1 stick of butter
- 1/4 cup of parsley
- 3 chopped white onions
- 2 chopped green onions
- 1 chopped green bell pepper
- 2 cups of water
- 4 cloves of chopped garlic
- 1 teaspoon of red pepper
- 4 tablespoons of flour
- 2 teaspoons of salt
- 1 teaspoon of black pepper
- 3 cans of Ro-Tel tomatoes
- one 8 ounce can of tomatoe sauce
- 1 stick of butter
- 4 tablespoons of vegetable oil
- 1 lb/ of andouille sausage
Instructions:
- In a pot, boil the alligator meat for 5 to 10 minutes.
- Remove the alligator meat and rinse it well.
- Brown the alligator meat in a heavy pot on a high setting.
- Remove the browned alligator meat.
- Add the oil to the pot and slowly add the flour while stirring to make a roux. Continue stirring until it is a dark roux.
- Add the onions and bell peppers to the roux. Cook them for about 5 minutes.
- Add all of the tomatoes and simmer for 30 minutes.
- Add the seasonings, meat, garlic, and sausage and simmer for about 30 minutes.
- Add the butter and simmer for another 30 minutes.
- Don't be afraid to use a little extra Cajun seasonings.
- Serve the sauce piquant over rice and enjoy!
